Oh my God, Cod!




How many uses do the Spanish have for cod. All over the country you can't find a menu that doesn't include this hearty fish. The nation’s mainstay is salted cod, which used to be known as Toe Rag in English. While in some countries this form of preserving the fish has fallen out of fashion, in Spain and neighbouring Portugal they have never turned their backs on the method nor the recipes that make handsome use of it. In all corners of the Iberian Peninsula you will see shop windows conspicuously filled with this distinctive looking fish stretched out and well salted.

Before any cooking can be done it first needs to de-salted by soaking overnight.

Cod Confit (Bacalao confit)
This is a simply beautiful way of cooking cod: infuse some very good extra virgin olive oil, such as Arbequina or Hojiblanca, with two garlic cloves, some thyme and leave in the oven at 100 ºC for about half an hour. Remember the cod must be completely immersed in oil. Then add the cod pieces and return the dish back to the oven and let the cod cook slowly (confit) for 7 minutes.

Now the cod is ready to eat straight away. You could go on to make Bacalao Pil Pil, a very famous recipe from the Basque Country, by just gently beating the remaining oil that will contain some of the natural fat that the fish has released. It will come out as a very fine cream and the perfect accompaniment to your cod.

Otherwise you could present it with some tomato confit. In a pan put two diced tomatoes, leaving out the seeds, add a dash of olive oil and two spoons of sugar. Cook briefly, until the tomatoes appear translucent and start to caramelize. You could even add a vanilla pod split in two.

Caramelized Apple Cod Brandade
With the same confit cod recipe we could even make a brandada de bacalla , typical dish from Catalonia, by putting the cooked cod in a mixer together with the garlic it has baked in, and some of the oil. Pulse briefly to obtain a cream. And there you have it.

Now once that cod is done I decided to spice up the recipe by adding a caramelized apple. First I sliced an apple horizontally and caramelized each piece in the oven by sprinkling them with caster sugar and then cooking under the grill until the sugar started bubbling. Leave to cool down and then I
spread the brandade on each slice and built up the slices one on the top of the other to form the apple once again. The warm apple is so juicy that combine very well with the sweet and garlicky cod.

In Spagna il baccala' e' diffusissimo! Da nord a Sud, isole comprese non c'e' quasi un solo menu' senza questo versatile pesce. Anche i nostri vicini, i portoghesi, ne fanno largo uso.

Uno dei piatti piu' famosi della cucina spagnola e' bacalao Pil-Pil. Si fa "confitare" il baccala- cioe cuocere lentamente, in olio evo, si deve ricoprire completamente d'olio.Una volta che e' pronto, grazie al grasso contenuto nel baccala' stesso, ruotando il tegame con movimenti onduladori si fa emulsionare l'olio con il grasso fino a che diventa una leggerissima crema. Si puo' anche fare con un frullino. Si prende l'olio che contiene il grasso si mette in una padellina fuoco dolce e si aziona il frullino fino a creare la salsina.






Il baccala' si puo' "confitare" anche in forno. In una pirofila da forno con i bordi alti versare tanto olio capace di ricoprire completamente i pezzi di baccala' previamente dissalati. Aggiungere un paio di spicchi d'aglio e del timo. Mettere nel forno caldo a 100-150 ºC per mezz'ora. Una volta che l'olio si infuso con l'aglio ed il timo, aggiungere il baccala'. Far cuocere per 7 minuti circa. Si puo' accompagnare con dei pomodori anch'essi "confit". In una padella con un filo d'olio mettere due pomodori tagliati a pezzetti con due - tre cucchiai di zucchero. aggiungere, se piace la meta' di un baccello di vaniglia e far cuocere dolcemente fino a che il pomodoro inizia a caramellare. Ci vogliono pochi minuti.

Con il baccala' confit si puo' preparare anche una brandada de bacalla'- piatto tipico della cucina catalana. Il pesce una volta cotto si mette in un mixer, con il suo aglio e olio di cottura. Non si deve ridurre in crema ma solo spappolare un pochino... Si puo' presentare con una mela caramellizata al forno. Affettare la mela in senso orizzontale, spargere ogni fetta con un pochino di zucchero semolata e far dorare sotto il grill. io ho tatto dorare le fatte previamente senza zucchero per 3-4- minuti e poi ho aggiunto lo zucchero e fatto caramellare. Disporre su di ogni fetta la brandada de bacalla' e ricomporre la mela. Se avete dell'olio al pistaccio gli va su che e' una meraviglia!

Mi piace molto tutto questo,il baccalà confit é una novità per me. La brandade la compro surgelata, ma voglio proprio provare a farla non sembra difficile, l'accostamento con le mele d'essere delizioso.Felice giornata. Mariluna
